Application:
The tomato sauce/ketchup production line starts with tomato paste (28-30 Brix or 36-38 Brix) as the main raw material. RO water is added to dilute the paste to 20-22 Brix or 12-14 Brix, followed by adding salt, sugar, vinegar, starch, and preservatives for flavor and shelf life. The mixture is blended, homogenized, degassed, and pasteurized. Then, the ketchup is filled into containers (bags, cans, bottles, doypacks, or cartons).
To extend shelf life, hot filling (85-89°C) is used. After filling, secondary pasteurization occurs in a water bath pasteurizer or spray cooling tunnel, cooling from 80°C to 30°C. The containers are then packed into cartons or shrink wraps.
